Millionaires Shortbread (for the 99%)

If you bring Millionaires Shortbread into work over the holidays it will make every single one of your colleagues ask your boss to promote you and then request a 50% raise for you on top of the promotion.

It is delicious, decadent and pretty easy to make. (thanks K & E)

· 8oz plain flour
· 3 ½ oz caster sugar
· 8oz butter
· 3 ½ oz semolina
8oz jar of Spoonable ™ Just Caramel – Brooklyn’s saucey caramel. For suppliers see
· 7 oz (2 x 100g bars) either Swiss milk or 70 % dark chocolate, broken into pieces
Serves: 6-8
1. Set the oven to 330F. Lightly butter a 8 inch x 13 inch tray bake/ Swiss roll tin.
2. Place the flour, sugar, butter and semolina into a food processor and combine until they form a smooth dough (this can also be done by hand in a bowl).
3. Press the mixture into the base of the tin and prick all over with a fork.
4. Bake for about 30 minutes until golden and firm. Set aside to cool.
5. Spread the Spoonable ™ Just Caramel evenly over the shortbread. Afterwards, enjoy licking the spoon!
6. Melt the chocolate in a bowl over a pan of simmering water. Pour the chocolate over the caramel and leave to set.
7. Cut into small squares (best done at room temperature otherwise the chocolate splinters) and store in an airtight tin.
